Yangzhou Fried rice

Yangzhou Fried Rice is a stir-fried dish with rice, shrimp, pork, vegetables, and eggs, cooked in a wok.

Instructions

  1. Heat 1 tablespoon of vegetable oil in a wok over medium-high heat.
  2. Add the beaten eggs and scramble until just set. Remove and set aside.
  3. Add the remaining vegetable oil to the wok and stir-fry the diced pork until cooked through.
  4. Add the shrimp to the wok and cook until pink and opaque.
  5. Add the diced carrot and thawed peas, stir-frying for 2 minutes.
  6. Add the cooked rice to the wok, breaking up any clumps with a spatula.
  7. Stir in the soy sauce, sesame oil, salt, and white pepper, mixing well.
  8. Return the scrambled eggs to the wok and add the chopped green onions, stirring to combine.
  9. Cook for an additional 2 minutes, ensuring everything is well mixed and heated through.
  10. Serve the Yangzhou Fried Rice hot.

Prep

  • Cook and cool the jasmine rice at least 2 hours in advance.
  • Thaw the frozen peas.
