Yangzhou Fried rice
Yangzhou Fried Rice is a stir-fried dish with rice, shrimp, pork, vegetables, and eggs, cooked in a wok.

Instructions
- Heat 1 tablespoon of vegetable oil in a wok over medium-high heat.
- Add the beaten eggs and scramble until just set. Remove and set aside.
- Add the remaining vegetable oil to the wok and stir-fry the diced pork until cooked through.
- Add the shrimp to the wok and cook until pink and opaque.
- Add the diced carrot and thawed peas, stir-frying for 2 minutes.
- Add the cooked rice to the wok, breaking up any clumps with a spatula.
- Stir in the soy sauce, sesame oil, salt, and white pepper, mixing well.
- Return the scrambled eggs to the wok and add the chopped green onions, stirring to combine.
- Cook for an additional 2 minutes, ensuring everything is well mixed and heated through.
- Serve the Yangzhou Fried Rice hot.
Prep
- Cook and cool the jasmine rice at least 2 hours in advance.
- Thaw the frozen peas.
