Atakilt Wat

Atakilt Wat is a spiced Ethiopian vegetable stew prepared by simmering cabbage, potatoes, and carrots with aromatic spices.

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onions and sauté until translucent.
  3. Stir in minced garlic and grated ginger, cooking for another minute.
  4. Add ground turmeric and cumin, stirring to coat the onions and garlic.
  5. Add cubed potatoes and sliced carrots, stirring to combine with the spices.
  6. Pour in water and bring to a simmer.
  7. Add chopped cabbage, salt, and black pepper, stirring to combine.
  8. Cover the pot and let the vegetables simmer for 20-25 minutes, or until tender.
  9. Adjust seasoning with more salt and pepper if needed before serving.
