Atakilt Wat
Atakilt Wat is a spiced Ethiopian vegetable stew prepared by simmering cabbage, potatoes, and carrots with aromatic spices.

Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onions and sauté until translucent.
- Stir in minced garlic and grated ginger, cooking for another minute.
- Add ground turmeric and cumin, stirring to coat the onions and garlic.
- Add cubed potatoes and sliced carrots, stirring to combine with the spices.
- Pour in water and bring to a simmer.
- Add chopped cabbage, salt, and black pepper, stirring to combine.
- Cover the pot and let the vegetables simmer for 20-25 minutes, or until tender.
- Adjust seasoning with more salt and pepper if needed before serving.
