Fosolia

Fosolia is a simple Ethiopian dish made by sautéing green beans and carrots with onions, garlic, and spices.

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onions and sauté until they become translucent.
  3. Stir in minced garlic and grated ginger, cooking for another minute.
  4. Add sliced carrots and cook for about 5 minutes, stirring occasionally.
  5. Add the green beans, diced tomatoes, salt, black pepper, and turmeric. Stir well to combine.
  6. Pour in water, cover the skillet, and let it simmer for 15-20 minutes until the vegetables are tender.
  7. Adjust seasoning if necessary and serve warm.
