Gomen Besega
Gomen Besega is a traditional Ethiopian dish made by simmering beef with collard greens, spices, and clarified butter.

Instructions
- Heat the clarified butter in a large pot over medium heat.
- Add the chopped onions and sauté until they are soft and translucent.
- Stir in the minced garlic and grated ginger, cooking for another minute.
- Add the beef cubes to the pot and brown them on all sides.
- Mix in the berbere spice, salt, and black pepper, stirring well to coat the beef.
- Pour in the water and bring the mixture to a simmer.
- Reduce the heat to low, cover the pot, and let it simmer for about 45 minutes, or until the beef is tender.
- Add the chopped collard greens to the pot and stir well.
- Continue to simmer for another 15 minutes, until the greens are cooked through.
- Adjust seasoning with more salt and pepper if needed before serving.
