Gomen Besega

Gomen Besega is a traditional Ethiopian dish made by simmering beef with collard greens, spices, and clarified butter.

Water (for simmering)500Milliliters

Instructions

  1. Heat the clarified butter in a large pot over medium heat.
  2. Add the chopped onions and sauté until they are soft and translucent.
  3. Stir in the minced garlic and grated ginger, cooking for another minute.
  4. Add the beef cubes to the pot and brown them on all sides.
  5. Mix in the berbere spice, salt, and black pepper, stirring well to coat the beef.
  6. Pour in the water and bring the mixture to a simmer.
  7. Reduce the heat to low, cover the pot, and let it simmer for about 45 minutes, or until the beef is tender.
  8. Add the chopped collard greens to the pot and stir well.
  9. Continue to simmer for another 15 minutes, until the greens are cooked through.
  10. Adjust seasoning with more salt and pepper if needed before serving.
