Shiro

Shiro is a traditional Ethiopian stew made by simmering chickpea flour with spices and aromatics, served with injera.

Instructions

  1. Heat vegetable oil in a pot over medium heat.
  2. Add chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in minced garlic and grated ginger, cooking for another 2 minutes.
  4. Add berbere spice and tomato paste, stirring well to combine.
  5. Gradually add chickpea flour, stirring continuously to avoid lumps.
  6. Slowly pour in water, stirring constantly, until the mixture is smooth.
  7. Bring to a simmer, reduce heat to low, and cook for 20-30 minutes, stirring occasionally.
  8. Season with salt and black pepper to taste.
  9. Serve hot with injera or your choice of flatbread.
