Tomato and Cottage Cheese Salad

Instructions

  1. In a large bowl, combine the diced tomatoes, crumbled cottage cheese, chopped red onion, and diced cucumber.
  2. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper to create the dressing.
  3. Pour the dressing over the tomato and cottage cheese mixture and toss gently to combine.
  4. Add the chopped fresh basil to the salad and toss again to distribute evenly.
  5. Taste and adjust seasoning with additional salt and pepper if needed.
  6. Serve the salad immediately or chill in the refrigerator for 30 minutes before serving.
