Instructions
- In a large bowl, combine the diced tomatoes, crumbled cottage cheese, chopped red onion, and diced cucumber.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper to create the dressing.
- Pour the dressing over the tomato and cottage cheese mixture and toss gently to combine.
- Add the chopped fresh basil to the salad and toss again to distribute evenly.
- Taste and adjust seasoning with additional salt and pepper if needed.
- Serve the salad immediately or chill in the refrigerator for 30 minutes before serving.
