Biko (Rice Cake)

Biko is a Filipino rice cake made by cooking glutinous rice with coconut milk and brown sugar, then baking it.

Instructions

  1. Soak the glutinous rice in water for at least 4 hours or overnight.
  2. Drain the soaked rice and transfer it to a large pot. Add 3 cups of coconut milk and salt. Cook over medium heat, stirring occasionally, until the rice is partially cooked and the liquid is absorbed.
  3. Preheat the oven to 180 degrees Celsius. Line a baking dish with banana leaves, if using.
  4. In a separate saucepan, combine the remaining 1 cup of coconut milk and brown sugar. Cook over medium heat until the sugar is dissolved and the mixture is slightly thickened.
  5. Mix the cooked rice with the coconut milk and sugar mixture. Transfer the mixture to the prepared baking dish, spreading it evenly.
  6. Pour the coconut cream over the rice mixture, spreading it evenly on top.
  7. Bake in the preheated oven for 45 minutes or until the top is golden brown.
  8. Allow the Biko to cool before slicing and serving.
