Biko (Rice Cake)
Biko is a Filipino rice cake made by cooking glutinous rice with coconut milk and brown sugar, then baking it.

Instructions
- Soak the glutinous rice in water for at least 4 hours or overnight.
- Drain the soaked rice and transfer it to a large pot. Add 3 cups of coconut milk and salt. Cook over medium heat, stirring occasionally, until the rice is partially cooked and the liquid is absorbed.
- Preheat the oven to 180 degrees Celsius. Line a baking dish with banana leaves, if using.
- In a separate saucepan, combine the remaining 1 cup of coconut milk and brown sugar. Cook over medium heat until the sugar is dissolved and the mixture is slightly thickened.
- Mix the cooked rice with the coconut milk and sugar mixture. Transfer the mixture to the prepared baking dish, spreading it evenly.
- Pour the coconut cream over the rice mixture, spreading it evenly on top.
- Bake in the preheated oven for 45 minutes or until the top is golden brown.
- Allow the Biko to cool before slicing and serving.
