Cassava cake is a baked dessert made with grated cassava, coconut milk, and condensed milk, topped with a custard layer.

Instructions

  1. Preheat the oven to 180 degrees Celsius.
  2. In a large mixing bowl, combine grated cassava, coconut milk, sweetened condensed milk, whole milk, sugar, melted butter, and vanilla extract.
  3. Mix the ingredients thoroughly until well combined.
  4. Pour the mixture into a greased baking dish.
  5. Bake in the preheated oven for 45 minutes.
  6. While the cake is baking, beat the eggs in a separate bowl.
  7. After 45 minutes, remove the cake from the oven and pour the beaten eggs over the top.
  8. Sprinkle grated cheddar cheese evenly over the egg layer.
  9. Return the cake to the oven and bake for an additional 15 minutes or until the top is golden brown.
  10. Allow the cake to cool before slicing and serving.

  • Thaw frozen cassava if using frozen variety.
