Chicken/Pork Adobo
Chicken or pork adobo is a Filipino dish simmered in soy sauce, vinegar, garlic, and spices until tender.

Instructions
- In a large bowl, combine chicken thighs, soy sauce, vinegar, minced garlic, bay leaves, and black peppercorns. Marinate for at least 1 hour in the refrigerator.
- Heat cooking oil in a large pot over medium heat. Add sliced onion and sauté until translucent.
- Add marinated chicken to the pot, reserving the marinade. Brown the chicken on all sides.
- Pour the reserved marinade and water into the pot. Add brown sugar and stir to combine.
- Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 30-40 minutes, or until chicken is tender.
- Remove the lid and continue to simmer for an additional 10 minutes to reduce the sauce.
- Serve the adobo hot with steamed rice.

- Marinate chicken for at least 1 hour in the refrigerator.
