Chicken/Pork Adobo

Chicken or pork adobo is a Filipino dish simmered in soy sauce, vinegar, garlic, and spices until tender.

Instructions

  1. In a large bowl, combine chicken thighs, soy sauce, vinegar, minced garlic, bay leaves, and black peppercorns. Marinate for at least 1 hour in the refrigerator.
  2. Heat cooking oil in a large pot over medium heat. Add sliced onion and sauté until translucent.
  3. Add marinated chicken to the pot, reserving the marinade. Brown the chicken on all sides.
  4. Pour the reserved marinade and water into the pot. Add brown sugar and stir to combine.
  5. Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 30-40 minutes, or until chicken is tender.
  6. Remove the lid and continue to simmer for an additional 10 minutes to reduce the sauce.
  7. Serve the adobo hot with steamed rice.

  • Marinate chicken for at least 1 hour in the refrigerator.
