Dinakdakan
Dinakdakan is a Filipino dish made by grilling pork parts, slicing them, and mixing with onions, chilies, and a creamy dressing.

Instructions
- Grill the pork belly and pork ears until they are cooked and slightly charred.
- Slice the grilled pork belly, pork ears, and pork liver into bite-sized pieces.
- In a large bowl, combine the sliced meats with chopped red onion and sliced green chili.
- Add calamansi juice, mayonnaise, salt, and black pepper to the bowl and mix well.
- Taste and adjust seasoning if necessary. Serve immediately.
Prep
- Boil pork ears for 1 hour until tender.
- Thaw pork liver if frozen.
