Ginataang Bilo bilo is a Filipino dessert made by simmering glutinous rice balls, sweet potatoes, and bananas in coconut milk.

Instructions

  1. In a bowl, mix glutinous rice flour with water to form a dough. Roll into small balls and set aside.
  2. In a large pot, bring coconut milk to a gentle simmer over medium heat.
  3. Add sweet potatoes to the pot and cook for about 10 minutes until they start to soften.
  4. Add the rice balls, bananas, jackfruit, and soaked tapioca pearls to the pot.
  5. Stir in sugar and salt, and continue to simmer for another 15 minutes until the rice balls are cooked and the mixture thickens.
  6. Serve warm in bowls.

Prep

  • Soak tapioca pearls in water for at least 1 hour before cooking.
