Goto
Goto is a Filipino rice porridge made by simmering beef tripe and rice in a flavorful broth, garnished with green onions and fried garlic.

Instructions
- In a large pot, bring water to a boil and add the beef tripe. Simmer for 1 hour until tender.
- Remove the tripe from the pot and set aside. Reserve the broth.
- In the same pot, sauté onions, garlic, and ginger until fragrant.
- Add the rinsed jasmine rice and stir to coat with the aromatics.
- Pour in the reserved broth and bring to a boil. Reduce heat and simmer until the rice is soft and porridge-like.
- Add the cooked tripe back into the pot along with fish sauce, salt, and pepper. Stir well.
- Stir in the whole milk and simmer for an additional 10 minutes.
- Serve hot, garnished with chopped green onions, fried garlic, and a side of calamansi.
Prep
- Clean and cut beef tripe into bite-sized pieces several hours before cooking.
