Goto is a Filipino rice porridge made by simmering beef tripe and rice in a flavorful broth, garnished with green onions and fried garlic.

Instructions

  1. In a large pot, bring water to a boil and add the beef tripe. Simmer for 1 hour until tender.
  2. Remove the tripe from the pot and set aside. Reserve the broth.
  3. In the same pot, sauté onions, garlic, and ginger until fragrant.
  4. Add the rinsed jasmine rice and stir to coat with the aromatics.
  5. Pour in the reserved broth and bring to a boil. Reduce heat and simmer until the rice is soft and porridge-like.
  6. Add the cooked tripe back into the pot along with fish sauce, salt, and pepper. Stir well.
  7. Stir in the whole milk and simmer for an additional 10 minutes.
  8. Serve hot, garnished with chopped green onions, fried garlic, and a side of calamansi.

  • Clean and cut beef tripe into bite-sized pieces several hours before cooking.
