Kaldereta

Kaldereta is a Filipino stew made with beef, simmered in tomato sauce with potatoes, carrots, and bell peppers.

Instructions

  1. Heat cooking oil in a large pot over medium heat.
  2. Sauté the onion and garlic until the onion becomes translucent.
  3. Add the beef cubes and cook until browned on all sides.
  4. Pour in the tomato sauce and beef broth, then add the bay leaves. Stir to combine.
  5. Bring to a boil, then reduce heat to low and simmer for 1.5 to 2 hours or until the beef is tender.
  6. Add the potatoes and carrots, and continue to simmer until the vegetables are tender.
  7. Stir in the liver spread, green olives, red and green bell peppers. Cook for another 10 minutes.
  8. Season with salt and black pepper to taste. Remove bay leaves before serving.
