Kamote Cue (Cassava Sugar Skewers)
Kamote Cue is a Filipino snack made by deep-frying skewered sweet potatoes coated in caramelized brown sugar.

Instructions
- Heat the vegetable oil in a deep frying pan over medium heat until it reaches 180 degrees Celsius.
- Carefully add the sweet potato slices into the hot oil and fry until they are golden brown and cooked through, about 8-10 minutes.
- Remove the sweet potatoes from the oil and drain on paper towels.
- In a separate pan, melt the brown sugar over low heat until it becomes a thick syrup.
- Add the fried sweet potato slices to the syrup and stir until they are well coated.
- Thread the coated sweet potato slices onto the bamboo skewers.
- Allow the skewers to cool slightly before serving.
Prep
- Soak bamboo skewers in water for 30 minutes to prevent burning during frying.
