Kamote Cue (Cassava Sugar Skewers)

Kamote Cue is a Filipino snack made by deep-frying skewered sweet potatoes coated in caramelized brown sugar.

Instructions

  1. Heat the vegetable oil in a deep frying pan over medium heat until it reaches 180 degrees Celsius.
  2. Carefully add the sweet potato slices into the hot oil and fry until they are golden brown and cooked through, about 8-10 minutes.
  3. Remove the sweet potatoes from the oil and drain on paper towels.
  4. In a separate pan, melt the brown sugar over low heat until it becomes a thick syrup.
  5. Add the fried sweet potato slices to the syrup and stir until they are well coated.
  6. Thread the coated sweet potato slices onto the bamboo skewers.
  7. Allow the skewers to cool slightly before serving.

Prep

  • Soak bamboo skewers in water for 30 minutes to prevent burning during frying.
