Mechado

Mechado is a Filipino beef stew prepared by braising beef with soy sauce, vinegar, and tomato sauce, enriched with vegetables and spices.

Instructions

  1. In a large bowl, marinate the beef cubes with soy sauce and vinegar for at least 30 minutes.
  2. Heat cooking oil in a large pot over medium heat. Sauté the onions and garlic until fragrant.
  3. Add the marinated beef to the pot and brown on all sides.
  4. Pour in the tomato sauce and water. Add bay leaves and black peppercorns. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for 1.5 to 2 hours or until beef is tender.
  6. Add potatoes, carrots, and red bell pepper. Continue to simmer until vegetables are cooked.
  7. Season with salt to taste. Remove bay leaves before serving.
