Mechado
Mechado is a Filipino beef stew prepared by braising beef with soy sauce, vinegar, and tomato sauce, enriched with vegetables and spices.

Instructions
- In a large bowl, marinate the beef cubes with soy sauce and vinegar for at least 30 minutes.
- Heat cooking oil in a large pot over medium heat. Sauté the onions and garlic until fragrant.
- Add the marinated beef to the pot and brown on all sides.
- Pour in the tomato sauce and water. Add bay leaves and black peppercorns. Bring to a boil.
- Reduce heat to low, cover, and simmer for 1.5 to 2 hours or until beef is tender.
- Add potatoes, carrots, and red bell pepper. Continue to simmer until vegetables are cooked.
- Season with salt to taste. Remove bay leaves before serving.
