Instructions

  1. Heat cooking oil in a pot over medium heat.
  2. Add chopped onion, minced garlic, and grated ginger. Sauté until the onion is translucent.
  3. Add pork shoulder cubes and cook until browned on all sides.
  4. Pour in vinegar and soy sauce, stir to combine.
  5. Add bay leaves, salt, and black pepper. Stir well.
  6. Pour in water and bring to a boil. Reduce heat to low and simmer for 30 minutes.
  7. Add pork blood gradually while stirring continuously to prevent coagulation.
  8. Simmer for another 15 minutes, stirring occasionally.
  9. Add sliced green chili and adjust seasoning if needed. Cook for an additional 5 minutes.
  10. Remove from heat and let it rest for a few minutes before serving.
