Instructions

  1. In a large bowl, combine soy sauce, vinegar, minced garlic, chopped onion, brown sugar, black pepper, and bay leaves to create the marinade.
  2. Add the cleaned and cut pork intestines to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 4 hours or overnight.
  3. Preheat the charcoal grill to medium-high heat.
  4. Thread the marinated pork intestines onto skewers, leaving space between each piece for even cooking.
  5. Brush the skewers with cooking oil to prevent sticking.
  6. Grill the skewers over charcoal, turning occasionally, until the intestines are cooked through and have a slightly charred exterior, about 15-20 minutes.
  7. Remove from the grill and let rest for a few minutes before serving.
  8. Garnish with lemon slices and serve hot.
