Instructions

  1. In a large pot, combine beef shank and water. Bring to a boil, skimming off any scum that rises to the surface.
  2. Add onion, garlic, and peppercorns to the pot. Lower the heat and simmer for about 1.5 hours or until beef is tender.
  3. Add fish sauce and continue to simmer for another 10 minutes.
  4. Add potatoes and carrots to the pot. Cook for about 10 minutes or until vegetables are tender.
  5. Add cabbage and green beans. Cook for another 5 minutes or until vegetables are tender yet crisp.
  6. Season with salt and black pepper to taste. Serve hot.
