Chocolate mousse

Prepare a rich chocolate mousse using dark chocolate, eggs, cream, and sugar, chilled to set.

Instructions

  1. Melt the chopped dark chocolate in a heatproof bowl over a pot of simmering water, stirring until smooth. Remove from heat and let it cool slightly.
  2. In a separate bowl, whisk the egg yolks with half of the sugar until pale and thick. Stir in the melted chocolate and vanilla extract.
  3. In another bowl, beat the egg whites with a pinch of salt until soft peaks form. Gradually add the remaining sugar and continue to beat until stiff peaks form.
  4. Gently fold the egg whites into the chocolate mixture in three additions, being careful not to deflate the mixture.
  5. Whip the chilled heavy cream until soft peaks form. Fold the whipped cream into the chocolate mixture until fully combined.
  6. Spoon the mousse into serving glasses or bowls and refrigerate for at least 2 hours to set.
