Chocolate mousse
Prepare a rich chocolate mousse using dark chocolate, eggs, cream, and sugar, chilled to set.

Instructions
- Melt the chopped dark chocolate in a heatproof bowl over a pot of simmering water, stirring until smooth. Remove from heat and let it cool slightly.
- In a separate bowl, whisk the egg yolks with half of the sugar until pale and thick. Stir in the melted chocolate and vanilla extract.
- In another bowl, beat the egg whites with a pinch of salt until soft peaks form. Gradually add the remaining sugar and continue to beat until stiff peaks form.
- Gently fold the egg whites into the chocolate mixture in three additions, being careful not to deflate the mixture.
- Whip the chilled heavy cream until soft peaks form. Fold the whipped cream into the chocolate mixture until fully combined.
- Spoon the mousse into serving glasses or bowls and refrigerate for at least 2 hours to set.
