Creole Potato Salad
Creole Potato Salad combines boiled potatoes, eggs, and a spicy dressing with Creole seasoning and vegetables.

Instructions
- Place the diced potatoes in a large pot, cover with water, and bring to a boil. Cook until tender, about 10-15 minutes. Drain and let cool.
- In a large bowl, combine the cooled potatoes, chopped eggs, celery, red bell pepper, and green onions.
- In a separate bowl, mix together the mayonnaise, creole mustard, creole seasoning, apple cider vinegar, salt, and black pepper.
- Pour the dressing over the potato mixture and gently toss to combine.
- Cover and refrigerate the salad for at least 1 hour to allow the flavors to meld.
- Before serving, sprinkle the salad with paprika for garnish.
