Creole Potato Salad

Creole Potato Salad combines boiled potatoes, eggs, and a spicy dressing with Creole seasoning and vegetables.

Instructions

  1. Place the diced potatoes in a large pot, cover with water, and bring to a boil. Cook until tender, about 10-15 minutes. Drain and let cool.
  2. In a large bowl, combine the cooled potatoes, chopped eggs, celery, red bell pepper, and green onions.
  3. In a separate bowl, mix together the mayonnaise, creole mustard, creole seasoning, apple cider vinegar, salt, and black pepper.
  4. Pour the dressing over the potato mixture and gently toss to combine.
  5. Cover and refrigerate the salad for at least 1 hour to allow the flavors to meld.
  6. Before serving, sprinkle the salad with paprika for garnish.
