Tian de legunes

Tian de légumes is a baked vegetable dish with layers of sliced vegetables and herbs, topped with cheese.

Instructions

  1. Preheat the oven to 180 degrees Celsius.
  2. In a large baking dish, drizzle some olive oil and spread the minced garlic evenly.
  3. Layer the sliced vegetables in the dish, alternating between zucchini, eggplant, tomato, red bell pepper, and onion.
  4. Sprinkle salt, black pepper, thyme, and basil leaves over the layered vegetables.
  5. Drizzle the remaining olive oil over the top of the vegetables.
  6. Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
  7. Remove the foil, sprinkle grated parmesan cheese over the top, and bake for an additional 15 minutes until the cheese is golden and bubbly.
  8. Remove from the oven and let it cool for a few minutes before serving.
