Instructions
- Prepare the chimichurri sauce by mixing olive oil, red wine vinegar, minced garlic, chopped parsley, oregano, red pepper flakes, salt, black pepper, and lemon juice in a bowl. Set aside.
- Season the beef short ribs, chicken drumsticks, and pork sausages with salt and black pepper.
- Preheat the charcoal grill to medium-high heat.
- Place the beef short ribs on the grill and cook for about 20 minutes, turning occasionally, until they are browned and cooked through.
- Add the chicken drumsticks to the grill and cook for about 25 minutes, turning occasionally, until they are cooked through and have a crispy skin.
- Grill the pork sausages for about 15 minutes, turning occasionally, until they are browned and cooked through.
- Remove the meats from the grill and let them rest for a few minutes.
- Serve the grilled meats with chimichurri sauce on the side.
Prep
- Thaw the beef short ribs and chicken drumsticks in the refrigerator overnight.
