Instructions

  1. Prepare the chimichurri sauce by mixing olive oil, red wine vinegar, minced garlic, chopped parsley, oregano, red pepper flakes, salt, black pepper, and lemon juice in a bowl. Set aside.
  2. Season the beef short ribs, chicken drumsticks, and pork sausages with salt and black pepper.
  3. Preheat the charcoal grill to medium-high heat.
  4. Place the beef short ribs on the grill and cook for about 20 minutes, turning occasionally, until they are browned and cooked through.
  5. Add the chicken drumsticks to the grill and cook for about 25 minutes, turning occasionally, until they are cooked through and have a crispy skin.
  6. Grill the pork sausages for about 15 minutes, turning occasionally, until they are browned and cooked through.
  7. Remove the meats from the grill and let them rest for a few minutes.
  8. Serve the grilled meats with chimichurri sauce on the side.

Prep

  • Thaw the beef short ribs and chicken drumsticks in the refrigerator overnight.
