CoD with Coconut, miso, and Cilantro
Prepare cod fillets with coconut milk, miso paste, and cilantro, simmered to infuse flavors.

Instructions
- In a large skillet, heat vegetable oil over medium heat.
- Add minced garlic, grated ginger, and sliced red chili. Sauté for 2 minutes until fragrant.
- Stir in white miso paste, coconut milk, fish sauce, lime juice, and brown sugar. Mix well.
- Bring the mixture to a simmer, then add the cod fillets.
- Cover and cook for 8-10 minutes until the cod is cooked through and flakes easily.
- Garnish with chopped cilantro and sliced scallions before serving.
