Aloo Soya Bean
Aloo Soya Bean is a vegetarian dish prepared by simmering potatoes and soya beans with spices and tomatoes.

| Salt (or to taste) | 1 | Tsp |
| Vegetable Oil | 3 | Tbsp |
| Water | 500 | Milliliters |
| Fresh Cilantro (chopped for garnish) | 1 | Bunch |
Instructions
- Heat oil in a large pan over medium heat and add cumin seeds. Let them splutter.
- Add chopped onions and sauté until golden brown.
- Add minced garlic, grated ginger, and slit green chilies. Sauté for another minute.
- Stir in the tomato puree and cook until the oil separates from the mixture.
- Add turmeric powder, coriander powder, and salt. Mix well.
- Add diced potatoes and soaked soya beans. Mix to coat them with the spices.
- Pour in water and bring to a boil. Reduce heat to low, cover, and simmer until potatoes and soya beans are tender.
- Sprinkle garam masala and stir well. Cook for another 2 minutes.
- Garnish with chopped fresh cilantro and serve hot.
Prep
- Soak soya beans in water for at least 4 hours or overnight.
