Aloo Soya Bean

Aloo Soya Bean is a vegetarian dish prepared by simmering potatoes and soya beans with spices and tomatoes.

Fresh Cilantro (chopped for garnish)1Bunch

Instructions

  1. Heat oil in a large pan over medium heat and add cumin seeds. Let them splutter.
  2. Add chopped onions and sauté until golden brown.
  3. Add minced garlic, grated ginger, and slit green chilies. Sauté for another minute.
  4. Stir in the tomato puree and cook until the oil separates from the mixture.
  5. Add turmeric powder, coriander powder, and salt. Mix well.
  6. Add diced potatoes and soaked soya beans. Mix to coat them with the spices.
  7. Pour in water and bring to a boil. Reduce heat to low, cover, and simmer until potatoes and soya beans are tender.
  8. Sprinkle garam masala and stir well. Cook for another 2 minutes.
  9. Garnish with chopped fresh cilantro and serve hot.

Prep

  • Soak soya beans in water for at least 4 hours or overnight.
