Chicken Adobo
Chicken Adobo is a Filipino dish prepared by marinating chicken in soy sauce, vinegar, and spices, then simmering until tender.

Instructions
- In a large bowl, combine soy sauce, vinegar, water, minced garlic, bay leaves, and whole black peppercorns.
- Add chicken thighs to the marinade, ensuring they are fully submerged. Cover and refrigerate for at least 1 hour.
- Heat cooking oil in a large pot over medium heat. Add sliced onion and sauté until translucent.
- Add marinated chicken thighs to the pot, reserving the marinade. Brown the chicken on all sides.
- Pour the reserved marinade into the pot with the chicken. Add brown sugar and stir to combine.
- Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 30-40 minutes, or until chicken is tender.
- Remove the lid and increase heat to medium-high. Cook for an additional 10 minutes to reduce the sauce.
- Serve the chicken adobo hot with steamed rice.
