Chicken Adobo

Chicken Adobo is a Filipino dish prepared by marinating chicken in soy sauce, vinegar, and spices, then simmering until tender.

Instructions

  1. In a large bowl, combine soy sauce, vinegar, water, minced garlic, bay leaves, and whole black peppercorns.
  2. Add chicken thighs to the marinade, ensuring they are fully submerged. Cover and refrigerate for at least 1 hour.
  3. Heat cooking oil in a large pot over medium heat. Add sliced onion and sauté until translucent.
  4. Add marinated chicken thighs to the pot, reserving the marinade. Brown the chicken on all sides.
  5. Pour the reserved marinade into the pot with the chicken. Add brown sugar and stir to combine.
  6. Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 30-40 minutes, or until chicken is tender.
  7. Remove the lid and increase heat to medium-high. Cook for an additional 10 minutes to reduce the sauce.
  8. Serve the chicken adobo hot with steamed rice.
