Chicken Inasal

Chicken Inasal is a Filipino grilled chicken dish marinated in a mixture of vinegar, calamansi, garlic, and spices, then grilled over charcoal.

Instructions

  1. In a large bowl, combine vinegar, calamansi juice, minced garlic, grated ginger, minced lemongrass, brown sugar, salt, and black pepper.
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 4 hours or overnight.
  3. Preheat a charcoal grill to medium heat.
  4. Remove chicken from the marinade and let excess marinade drip off.
  5. Grill the chicken, skin side down, over medium heat, basting with annatto oil occasionally, until cooked through and skin is crispy, about 30-40 minutes.
  6. Turn the chicken occasionally to ensure even cooking and prevent burning.
  7. Serve hot with rice and dipping sauce if desired.

Prep

  • Marinate chicken in the refrigerator for at least 4 hours or overnight.
