Chicken Inasal
Chicken Inasal is a Filipino grilled chicken dish marinated in a mixture of vinegar, calamansi, garlic, and spices, then grilled over charcoal.

Instructions
- In a large bowl, combine vinegar, calamansi juice, minced garlic, grated ginger, minced lemongrass, brown sugar, salt, and black pepper.
- Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 4 hours or overnight.
- Preheat a charcoal grill to medium heat.
- Remove chicken from the marinade and let excess marinade drip off.
- Grill the chicken, skin side down, over medium heat, basting with annatto oil occasionally, until cooked through and skin is crispy, about 30-40 minutes.
- Turn the chicken occasionally to ensure even cooking and prevent burning.
- Serve hot with rice and dipping sauce if desired.

- Marinate chicken in the refrigerator for at least 4 hours or overnight.
