Goto Lugaw

Goto Lugaw is a Filipino rice porridge made with beef tripe, simmered in broth with ginger and garlic, and garnished with green onions and boiled eggs.

Instructions

  1. In a large pot, bring beef broth to a boil. Add beef tripe and simmer for 1.5 hours until tender.
  2. In a separate pan, sauté garlic, onion, and ginger until fragrant.
  3. Add the sautéed mixture to the pot with the beef tripe.
  4. Add rinsed jasmine rice to the pot and stir well.
  5. Season with fish sauce, salt, and pepper. Simmer until rice is fully cooked and the porridge thickens, about 30 minutes.
  6. Serve hot, garnished with chopped green onions and boiled egg halves. Squeeze calamansi over the top before eating.

Prep

  • Soak beef tripe in water with a little vinegar for 2 hours to remove odor.
