Goto Lugaw
Goto Lugaw is a Filipino rice porridge made with beef tripe, simmered in broth with ginger and garlic, and garnished with green onions and boiled eggs.

Instructions
- In a large pot, bring beef broth to a boil. Add beef tripe and simmer for 1.5 hours until tender.
- In a separate pan, sauté garlic, onion, and ginger until fragrant.
- Add the sautéed mixture to the pot with the beef tripe.
- Add rinsed jasmine rice to the pot and stir well.
- Season with fish sauce, salt, and pepper. Simmer until rice is fully cooked and the porridge thickens, about 30 minutes.
- Serve hot, garnished with chopped green onions and boiled egg halves. Squeeze calamansi over the top before eating.
Prep
- Soak beef tripe in water with a little vinegar for 2 hours to remove odor.
