Kaldereta (Your Choice of Meat)
Kaldereta is a Filipino stew made by simmering beef with vegetables, liver spread, and tomato sauce until tender.

Instructions
- Heat olive oil in a large pot over medium heat. Add the beef cubes and brown them on all sides.
- Remove the beef and set aside. In the same pot, sauté onions and garlic until fragrant.
- Return the beef to the pot. Add tomato sauce, beef broth, and bay leaves. Stir well.
- Bring to a boil, then reduce heat to low. Cover and simmer for about 1.5 to 2 hours or until beef is tender.
- Add potatoes and carrots to the pot. Cook for another 15 minutes.
- Stir in liver spread, red and green bell peppers, salt, and black pepper. Simmer for an additional 10 minutes.
- Add grated cheddar cheese and stir until melted and well combined. Adjust seasoning if necessary.
- Remove from heat and let it rest for a few minutes before serving.
Prep
- Thaw beef chuck if frozen.
