Kaldereta (Your Choice of Meat)

Kaldereta is a Filipino stew made by simmering beef with vegetables, liver spread, and tomato sauce until tender.

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the beef cubes and brown them on all sides.
  2. Remove the beef and set aside. In the same pot, sauté onions and garlic until fragrant.
  3. Return the beef to the pot. Add tomato sauce, beef broth, and bay leaves. Stir well.
  4. Bring to a boil, then reduce heat to low. Cover and simmer for about 1.5 to 2 hours or until beef is tender.
  5. Add potatoes and carrots to the pot. Cook for another 15 minutes.
  6. Stir in liver spread, red and green bell peppers, salt, and black pepper. Simmer for an additional 10 minutes.
  7. Add grated cheddar cheese and stir until melted and well combined. Adjust seasoning if necessary.
  8. Remove from heat and let it rest for a few minutes before serving.

Prep

  • Thaw beef chuck if frozen.
