Kare-Kare
Kare-Kare is a Filipino stew made with oxtail, vegetables, and a rich peanut sauce, traditionally cooked slowly to tenderize the meat and blend flavors.

Instructions
- Soak annatto seeds in warm water for 30 minutes, then strain to extract the color.
- In a large pot, boil oxtail in beef broth until tender, about 2 hours. Skim off any foam.
- In a separate pan, sauté garlic and onion until fragrant.
- Add peanut butter and annatto water to the sautéed garlic and onion, stirring well.
- Pour the peanut mixture into the pot with the oxtail. Stir to combine.
- Add rice flour dissolved in water to thicken the sauce. Stir continuously.
- Add eggplant, banana heart, and green beans. Cook until vegetables are tender.
- Season with salt and black pepper to taste.
- Add bok choy and cook for another 2 minutes.
- Serve hot with bagoong on the side.
Prep
- Soak annatto seeds in water for 30 minutes before cooking.
- Boil oxtail in beef broth for 2 hours until tender.
