Instructions

  1. Soak rice noodles in water for 30 minutes, then drain and set aside.
  2. In a pan, heat cooking oil and sauté garlic and onion until fragrant.
  3. Add pork belly and cook until browned. Add shrimp and cook until pink.
  4. Add fish sauce and annatto powder, stir well.
  5. Pour in shrimp broth and bring to a boil. Simmer for 5 minutes.
  6. Add cornstarch mixture to thicken the sauce, stirring continuously.
  7. In a separate pot, boil water and cook the soaked noodles for 2-3 minutes. Drain and place on a serving platter.
  8. Pour the shrimp sauce over the noodles, ensuring even coverage.
  9. Top with sliced hard-boiled eggs, chopped green onions, and fried garlic.
  10. Serve with lemon wedges on the side.
