Pancit Palabok
Pancit Palabok is a Filipino noodle dish prepared with rice noodles, shrimp sauce, and various toppings including pork, shrimp, and hard-boiled eggs.

Instructions
- Soak rice noodles in water for 30 minutes, then drain and set aside.
- In a pan, heat cooking oil and sauté garlic and onion until fragrant.
- Add pork belly and cook until browned. Add shrimp and cook until pink.
- Add fish sauce and annatto powder, stir well.
- Pour in shrimp broth and bring to a boil. Simmer for 5 minutes.
- Add cornstarch mixture to thicken the sauce, stirring continuously.
- In a separate pot, boil water and cook the soaked noodles for 2-3 minutes. Drain and place on a serving platter.
- Pour the shrimp sauce over the noodles, ensuring even coverage.
- Top with sliced hard-boiled eggs, chopped green onions, and fried garlic.
- Serve with lemon wedges on the side.
