Pork Adobo

Pork Adobo is a Filipino dish prepared by marinating pork in vinegar, soy sauce, garlic, and spices, then simmering until tender.

Instructions

  1. In a large bowl, combine pork shoulder, soy sauce, vinegar, minced garlic, bay leaves, and black peppercorns. Mix well and marinate for at least 1 hour.
  2. Heat cooking oil in a large pot over medium heat. Add sliced onion and sauté until translucent.
  3. Add the marinated pork and marinade to the pot. Cook until the pork is browned on all sides.
  4. Pour in water and bring to a boil. Lower the heat, cover, and simmer for about 45 minutes or until the pork is tender.
  5. If desired, add sugar to balance the flavors. Continue to simmer uncovered for another 10 minutes to reduce the sauce.
  6. Serve the Pork Adobo hot with steamed rice.

Prep

  • Marinate the pork shoulder for at least 1 hour before cooking.
