Pork Adobo
Pork Adobo is a Filipino dish prepared by marinating pork in vinegar, soy sauce, garlic, and spices, then simmering until tender.

Instructions
- In a large bowl, combine pork shoulder, soy sauce, vinegar, minced garlic, bay leaves, and black peppercorns. Mix well and marinate for at least 1 hour.
- Heat cooking oil in a large pot over medium heat. Add sliced onion and sauté until translucent.
- Add the marinated pork and marinade to the pot. Cook until the pork is browned on all sides.
- Pour in water and bring to a boil. Lower the heat, cover, and simmer for about 45 minutes or until the pork is tender.
- If desired, add sugar to balance the flavors. Continue to simmer uncovered for another 10 minutes to reduce the sauce.
- Serve the Pork Adobo hot with steamed rice.

- Marinate the pork shoulder for at least 1 hour before cooking.
