Instructions

  1. Marinate the beef with 2 tablespoons of lime juice, 2 tablespoons of fish sauce, 1 tablespoon of brown sugar, and 1 minced garlic clove for at least 30 minutes.
  2. Preheat the grill to medium-high heat. Grill the beef for about 4-5 minutes on each side for medium-rare. Let it rest for 10 minutes before slicing thinly.
  3. In a small bowl, mix the remaining lime juice, fish sauce, brown sugar, chopped Thai chili, and minced garlic to make the dressing.
  4. In a large bowl, combine the sliced cucumber, red onion, cherry tomatoes, mint leaves, cilantro, and lettuce.
  5. Add the sliced beef to the salad and pour the dressing over it. Toss everything gently to combine.
  6. Sprinkle the roasted peanuts over the salad before serving.
