Tinola

Tinola is a Filipino chicken soup prepared by simmering chicken with ginger, garlic, onion, green papaya, and chili leaves.

Instructions

  1. In a large pot, heat a small amount of oil over medium heat and sauté the garlic, onion, and ginger until fragrant.
  2. Add the chicken pieces to the pot and cook until they are lightly browned on all sides.
  3. Pour in the fish sauce and continue to cook for another 2 minutes, stirring occasionally.
  4. Add the water to the pot and bring to a boil. Once boiling, reduce the heat to a simmer and cook for 30 minutes.
  5. Add the sliced green papaya to the pot and continue to simmer for another 10 minutes or until the papaya is tender.
  6. Stir in the chili leaves and season with salt and black pepper to taste. Cook for an additional 2 minutes.
  7. Remove from heat and let the soup rest for a few minutes before serving.
