Tinola
Tinola is a Filipino chicken soup prepared by simmering chicken with ginger, garlic, onion, green papaya, and chili leaves.

Instructions
- In a large pot, heat a small amount of oil over medium heat and sauté the garlic, onion, and ginger until fragrant.
- Add the chicken pieces to the pot and cook until they are lightly browned on all sides.
- Pour in the fish sauce and continue to cook for another 2 minutes, stirring occasionally.
- Add the water to the pot and bring to a boil. Once boiling, reduce the heat to a simmer and cook for 30 minutes.
- Add the sliced green papaya to the pot and continue to simmer for another 10 minutes or until the papaya is tender.
- Stir in the chili leaves and season with salt and black pepper to taste. Cook for an additional 2 minutes.
- Remove from heat and let the soup rest for a few minutes before serving.
