Kaiserschmarrn is a shredded pancake made by whisking eggs, flour, and milk, then frying and caramelizing with sugar.

Instructions

  1. In a large bowl, whisk together the egg yolks, flour, milk, vanilla extract, and salt until smooth.
  2. In a separate bowl, beat the egg whites until stiff peaks form. Gradually add the granulated sugar while continuing to beat.
  3. Gently fold the beaten egg whites into the yolk mixture until just combined.
  4. Melt half of the butter in a large skillet over medium heat. Pour in the batter and sprinkle with raisins if using.
  5. Cook until the bottom is golden brown, about 4-5 minutes. Flip the pancake and cook for another 3 minutes.
  6. Using two forks, tear the pancake into bite-sized pieces. Add the remaining butter and a little sugar to caramelize.
  7. Continue cooking until the pieces are golden brown and caramelized, about 2-3 minutes.
  8. Serve warm, dusted with powdered sugar.

Prep

  • Soak raisins in rum or water for at least 1 hour before cooking.
