Kaiserschmarrn
Kaiserschmarrn is a shredded pancake made by whisking eggs, flour, and milk, then frying and caramelizing with sugar.

Instructions
- In a large bowl, whisk together the egg yolks, flour, milk, vanilla extract, and salt until smooth.
- In a separate bowl, beat the egg whites until stiff peaks form. Gradually add the granulated sugar while continuing to beat.
- Gently fold the beaten egg whites into the yolk mixture until just combined.
- Melt half of the butter in a large skillet over medium heat. Pour in the batter and sprinkle with raisins if using.
- Cook until the bottom is golden brown, about 4-5 minutes. Flip the pancake and cook for another 3 minutes.
- Using two forks, tear the pancake into bite-sized pieces. Add the remaining butter and a little sugar to caramelize.
- Continue cooking until the pieces are golden brown and caramelized, about 2-3 minutes.
- Serve warm, dusted with powdered sugar.
Prep
- Soak raisins in rum or water for at least 1 hour before cooking.
