Kartoffelsuppe is a German potato soup made by simmering potatoes, vegetables, and bacon in broth, then blending for a creamy texture.

Instructions

  1. In a large pot, melt the butter over medium heat and add the diced bacon. Cook until crispy.
  2. Add the chopped onion and minced garlic to the pot. Sauté until the onion is translucent.
  3. Add the sliced carrots and celery to the pot. Cook for another 5 minutes, stirring occasionally.
  4. Add the diced potatoes to the pot and pour in the vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes or until potatoes are tender.
  5. Use an immersion blender to blend the soup until smooth. Alternatively, transfer to a blender in batches and blend until smooth.
  6. Stir in the heavy cream, salt, and black pepper. Simmer for an additional 5 minutes.
  7. Serve hot, garnished with chopped parsley.
