Zwiebel roast braten is a German-style beef roast cooked with onions and spices, served with a rich gravy.

Instructions
- Preheat the oven to 160 degrees Celsius.
- Season the beef roast with salt and black pepper.
- Heat vegetable oil in a large oven-safe pot over medium-high heat. Sear the beef roast on all sides until browned.
- Remove the beef from the pot and set aside. In the same pot, add butter and sliced onions. Cook until onions are caramelized.
- Add minced garlic to the onions and cook for an additional minute.
- Sprinkle flour over the onion mixture and stir well to combine.
- Gradually add red wine, scraping up any browned bits from the bottom of the pot.
- Return the beef roast to the pot. Add beef broth, bay leaves, and thyme.
- Cover the pot and transfer it to the preheated oven. Roast for about 2.5 to 3 hours, or until the beef is tender.
- Remove the beef from the pot and let it rest for 10 minutes before slicing.
- Strain the cooking liquid and return it to the pot. Simmer until slightly thickened to make the gravy.
- Serve the sliced beef with the onion gravy.
Prep
- Thaw the beef roast in the refrigerator overnight if frozen.
