Instructions

  1. Preheat the oven to 200 degrees Celsius.
  2. Pound the chicken breasts to an even thickness.
  3. Season the chicken with salt and black pepper.
  4. Dip each chicken breast into the beaten eggs, then coat with gluten-free breadcrumbs mixed with grated Parmesan cheese.
  5. Heat olive oil in a skillet over medium heat and cook the breaded chicken breasts until golden brown on both sides, about 3-4 minutes per side.
  6. Place the browned chicken breasts in a baking dish.
  7. Pour marinara sauce over the chicken breasts and top with sliced mozzarella cheese.
  8. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  9. Garnish with chopped fresh basil before serving.
