Instructions
- Preheat the oven to 200 degrees Celsius.
- Pound the chicken breasts to an even thickness.
- Season the chicken with salt and black pepper.
- Dip each chicken breast into the beaten eggs, then coat with gluten-free breadcrumbs mixed with grated Parmesan cheese.
- Heat olive oil in a skillet over medium heat and cook the breaded chicken breasts until golden brown on both sides, about 3-4 minutes per side.
- Place the browned chicken breasts in a baking dish.
- Pour marinara sauce over the chicken breasts and top with sliced mozzarella cheese.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
