Fresh Pasta

Prepare fresh pasta using flour, eggs, and olive oil, kneading and rolling the dough before cutting into desired shapes.

Instructions

  1. Place the flour on a clean surface and make a well in the center.
  2. Crack the eggs into the well, add olive oil and salt.
  3. Using a fork, gradually incorporate the flour into the eggs until a dough begins to form.
  4. Knead the dough for about 10 minutes until smooth and elastic.
  5. Wrap the dough in plastic wrap and let it rest for at least 30 minutes.
  6. Divide the dough into four pieces and roll each piece out using a pasta machine or rolling pin to desired thickness.
  7. Cut the rolled dough into desired pasta shapes such as fettuccine or tagliatelle.
  8. Dust the pasta with flour to prevent sticking and let it dry slightly before cooking.
