Shrimp scampi

Shrimp scampi is a quick-cooked dish with shrimp, garlic, butter, and lemon juice served over pasta.

Instructions

  1. Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil and half of the butter over medium heat.
  3. Add minced garlic and red pepper flakes to the skillet, sauté for about 1 minute until fragrant.
  4. Add the shrimp to the skillet, season with salt and black pepper, and cook for 2-3 minutes until they turn pink.
  5. Pour in the white wine and lemon juice, bring to a simmer, and let it reduce by half.
  6. Add the remaining butter, lemon zest, and chopped parsley to the skillet, stirring to combine.
  7. Add the cooked spaghetti to the skillet, tossing to coat the pasta with the sauce.
  8. Adjust seasoning with additional salt and pepper if needed, then serve immediately.
