Spicy Calabrian Penne
Prepare a vegetarian lasagna with layers of vegetables, pasta, and a pistachio béchamel sauce.

Instructions
- Preheat the oven to 180 degrees Celsius.
- In a large skillet, heat olive oil over medium heat and sauté garlic until fragrant.
- Add zucchini, eggplant, and red bell pepper to the skillet. Cook until tender, about 8 minutes.
- Add spinach to the skillet and cook until wilted. Season with salt and black pepper. Set aside.
- In a saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute.
- Gradually whisk in whole milk, stirring constantly until the sauce thickens.
- Add ground nutmeg and pistachios to the béchamel sauce. Blend until smooth using an immersion blender.
- In a baking dish, spread a layer of pistachio béchamel sauce, followed by lasagna noodles.
- Layer with half of the vegetable mixture, ricotta cheese, and mozzarella cheese.
- Repeat layers, ending with a layer of noodles and béchamel sauce on top.
- Sprinkle grated parmesan cheese over the top layer.
- Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15 minutes until golden brown.
- Let the lasagna rest for 10 minutes before serving.
