Grilled Beef Tenderloin with Peppercorn
Grilled beef tenderloin with crushed peppercorns and a creamy sauce, prepared with whole milk cream and fresh herbs.

Instructions
- Season the beef tenderloin steaks with salt and press the crushed peppercorns onto both sides.
- Heat olive oil in a grill pan over medium-high heat. Add the steaks and cook for 4-5 minutes on each side for medium-rare.
- Remove the steaks from the pan and let them rest, covered with foil.
- In the same pan, add butter and sauté shallots and garlic until soft.
- Deglaze the pan with brandy, scraping up any browned bits, and let it reduce by half.
- Add heavy cream and thyme, simmer until the sauce thickens slightly.
- Serve the steaks with the peppercorn sauce drizzled over the top.
Prep
- Bring beef tenderloin to room temperature 1 hour before cooking.
