Beyond Meat Spaghetti Bolognese
Prepare a flavorful Beyond Meat spaghetti Bolognese using plant-based meat, tomatoes, and herbs, served over spaghetti.

Instructions
- Heat olive oil in a large skillet over medium heat. Add chopped onion, garlic, carrot, and celery. Sauté until vegetables are soft.
- Add Beyond Meat to the skillet. Cook until browned, breaking it up with a spoon as it cooks.
- Stir in tomato paste and cook for 2 minutes. Add red wine and let it simmer until reduced by half.
- Add crushed tomatoes, vegetable broth, bay leaf, oregano, basil, salt, and pepper. Stir well and bring to a simmer.
- Reduce heat to low and let the sauce simmer for 30 minutes, stirring occasionally.
- While the sauce simmers, cook spaghetti according to package instructions. Drain and set aside.
- Remove bay leaf from the sauce. Serve the Bolognese sauce over spaghetti and top with grated parmesan cheese if desired.
