Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chopped onion, garlic, carrot, and celery. Sauté until vegetables are soft.
  2. Add Beyond Meat to the skillet. Cook until browned, breaking it up with a spoon as it cooks.
  3. Stir in tomato paste and cook for 2 minutes. Add red wine and let it simmer until reduced by half.
  4. Add crushed tomatoes, vegetable broth, bay leaf, oregano, basil, salt, and pepper. Stir well and bring to a simmer.
  5. Reduce heat to low and let the sauce simmer for 30 minutes, stirring occasionally.
  6. While the sauce simmers, cook spaghetti according to package instructions. Drain and set aside.
  7. Remove bay leaf from the sauce. Serve the Bolognese sauce over spaghetti and top with grated parmesan cheese if desired.
