Home made ravioli

Koobideh kabob is a Persian dish made by grilling seasoned ground beef and lamb on skewers over an open flame.

Instructions

  1. In a large bowl, combine ground beef, ground lamb, grated onion, minced garlic, salt, black pepper, and turmeric.
  2. Mix the ingredients thoroughly using your hands until well combined and sticky.
  3. Cover the mixture and refrigerate for at least 1 hour to allow flavors to meld.
  4. Preheat the grill to medium-high heat.
  5. Divide the meat mixture into 10 equal portions and shape each portion around a skewer, pressing firmly to ensure it adheres well.
  6. Grill the skewers for about 4-5 minutes on each side, or until the meat is cooked through and has a nice char.
  7. Brush the cooked kabobs with melted butter for added flavor.
  8. Sprinkle sumac over the kabobs and serve with flatbread.

Prep

  • Refrigerate the meat mixture for at least 1 hour before grilling.
