Prepare Jerk Rasta Pasta with jerk seasoning, bell peppers, and creamy sauce, served with chicken or vegan option.

Instructions

  1. Marinate chicken strips with jerk seasoning for at least 30 minutes.
  2. Cook penne pasta according to package instructions, drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add marinated chicken and cook until browned and cooked through. Remove and set aside.
  4. In the same skillet, add sliced onions, bell peppers, and minced garlic. Sauté until vegetables are tender.
  5. Pour in coconut milk and heavy cream, stir well. Add thyme, salt, and black pepper. Simmer for 5 minutes.
  6. Add cooked pasta and chicken back into the skillet. Toss to combine and heat through.
  7. Garnish with chopped scallions before serving.
