Pasta Carbonara
Pasta Carbonara is a classic Italian dish made by combining cooked pasta with pancetta, eggs, and cheese to create a creamy sauce.

Instructions
- Bring a large pot of salted water to a boil and cook the spaghetti until al dente.
- In a large skillet over medium heat, cook the diced pancetta until crispy. Add minced garlic and sauté for 1 minute.
- In a bowl, whisk together the eggs, grated parmesan, grated pecorino romano, and freshly ground black pepper.
- Drain the pasta, reserving 1 cup of pasta water. Add the pasta to the skillet with pancetta and garlic.
- Remove the skillet from heat and quickly stir in the egg and cheese mixture, adding reserved pasta water as needed to create a creamy sauce.
- Serve immediately, garnished with additional grated cheese and black pepper if desired.
