Pasta Carbonara

Pasta Carbonara is a classic Italian dish made by combining cooked pasta with pancetta, eggs, and cheese to create a creamy sauce.

Instructions

  1. Bring a large pot of salted water to a boil and cook the spaghetti until al dente.
  2. In a large skillet over medium heat, cook the diced pancetta until crispy. Add minced garlic and sauté for 1 minute.
  3. In a bowl, whisk together the eggs, grated parmesan, grated pecorino romano, and freshly ground black pepper.
  4. Drain the pasta, reserving 1 cup of pasta water. Add the pasta to the skillet with pancetta and garlic.
  5. Remove the skillet from heat and quickly stir in the egg and cheese mixture, adding reserved pasta water as needed to create a creamy sauce.
  6. Serve immediately, garnished with additional grated cheese and black pepper if desired.
