Instructions
- Prepare the chicken by slicing each breast into cutlets.
- Coat the chicken cutlets in flour, dip in beaten egg, and cover with panko breadcrumbs.
- Heat vegetable oil in a deep pan and fry the breaded chicken until golden brown. Drain on paper towels.
- In a separate pan, sauté sliced onion until soft.
- Add dashi stock, soy sauce, mirin, and sugar to the pan with onions and bring to a simmer.
- Place fried chicken cutlets into the simmering sauce and pour lightly beaten eggs over the top. Cover and cook until eggs are just set.
- Serve the chicken and egg mixture over bowls of cooked rice and garnish with chopped green onions.
