Instructions

  1. Prepare the chicken by slicing each breast into cutlets.
  2. Coat the chicken cutlets in flour, dip in beaten egg, and cover with panko breadcrumbs.
  3. Heat vegetable oil in a deep pan and fry the breaded chicken until golden brown. Drain on paper towels.
  4. In a separate pan, sauté sliced onion until soft.
  5. Add dashi stock, soy sauce, mirin, and sugar to the pan with onions and bring to a simmer.
  6. Place fried chicken cutlets into the simmering sauce and pour lightly beaten eggs over the top. Cover and cook until eggs are just set.
  7. Serve the chicken and egg mixture over bowls of cooked rice and garnish with chopped green onions.
