Oyako Don

Oyako Don is a Japanese rice bowl dish prepared by simmering chicken and eggs in a savory dashi broth, served over steamed rice.

Instructions

  1. In a bowl, mix dashi stock, soy sauce, mirin, and sugar until the sugar dissolves.
  2. In a large skillet, add the sliced onions and pour in the dashi mixture. Bring to a simmer over medium heat.
  3. Add the chicken pieces to the skillet and simmer until the chicken is cooked through, about 10 minutes.
  4. Pour the beaten eggs evenly over the chicken and onion mixture. Cover the skillet and cook until the eggs are just set, about 2-3 minutes.
  5. Divide the steamed rice into bowls and spoon the chicken and egg mixture over the rice.
  6. Garnish with chopped green onions and serve immediately.
