Tamago Yaki
Tamago Yaki is a Japanese rolled omelette made with eggs, dashi, soy sauce, and sugar, cooked in a rectangular pan.

Instructions
- In a bowl, whisk together the eggs, dashi, soy sauce, and sugar until well combined.
- Heat a rectangular tamagoyaki pan over medium heat and lightly oil it with vegetable oil.
- Pour a thin layer of the egg mixture into the pan, tilting to cover the bottom evenly.
- Cook until the egg is just set, then roll it up to one side of the pan using chopsticks or a spatula.
- Oil the pan again, pour another thin layer of egg mixture, lifting the rolled egg to let the new layer flow underneath.
- Cook until set, then roll the cooked egg back over the new layer. Repeat the process until all the egg mixture is used.
- Once cooked, remove the rolled omelette from the pan and let it cool slightly before slicing into pieces.
