Tamago Yaki

Tamago Yaki is a Japanese rolled omelette made with eggs, dashi, soy sauce, and sugar, cooked in a rectangular pan.

Instructions

  1. In a bowl, whisk together the eggs, dashi, soy sauce, and sugar until well combined.
  2. Heat a rectangular tamagoyaki pan over medium heat and lightly oil it with vegetable oil.
  3. Pour a thin layer of the egg mixture into the pan, tilting to cover the bottom evenly.
  4. Cook until the egg is just set, then roll it up to one side of the pan using chopsticks or a spatula.
  5. Oil the pan again, pour another thin layer of egg mixture, lifting the rolled egg to let the new layer flow underneath.
  6. Cook until set, then roll the cooked egg back over the new layer. Repeat the process until all the egg mixture is used.
  7. Once cooked, remove the rolled omelette from the pan and let it cool slightly before slicing into pieces.
