Lomo Saltado
Lomo Saltado is a Peruvian stir-fry combining beef, vegetables, and soy sauce, served with rice and fries.

Instructions
- In a bowl, marinate beef strips with half of the soy sauce, red wine vinegar, salt, and black pepper for 15 minutes.
- Heat 2 tablespoons of vegetable oil in a large skillet over high heat. Stir-fry the marinated beef until browned, then remove and set aside.
- In the same skillet, add the remaining oil and sauté the garlic, onions, and yellow chili peppers until the onions are translucent.
- Add the tomatoes and cook for an additional 2 minutes.
- Return the beef to the skillet, add the remaining soy sauce, and stir-fry everything together for another minute.
- Garnish with chopped cilantro and serve immediately with cooked white rice and french fries.
