Lomo Saltado

Lomo Saltado is a Peruvian stir-fry combining beef, vegetables, and soy sauce, served with rice and fries.

Instructions

  1. In a bowl, marinate beef strips with half of the soy sauce, red wine vinegar, salt, and black pepper for 15 minutes.
  2. Heat 2 tablespoons of vegetable oil in a large skillet over high heat. Stir-fry the marinated beef until browned, then remove and set aside.
  3. In the same skillet, add the remaining oil and sauté the garlic, onions, and yellow chili peppers until the onions are translucent.
  4. Add the tomatoes and cook for an additional 2 minutes.
  5. Return the beef to the skillet, add the remaining soy sauce, and stir-fry everything together for another minute.
  6. Garnish with chopped cilantro and serve immediately with cooked white rice and french fries.
