Chicken Tinga Tacos
Chicken Tinga Tacos are prepared by simmering shredded chicken in a spicy tomato sauce and served in corn tortillas.

Instructions
- Heat olive oil in a large skillet over medium heat.
- Add sliced onion and minced garlic, sauté until onion is translucent.
- Add chipotle peppers, crushed tomatoes, and chicken broth to the skillet. Stir to combine.
- Season with salt and black pepper. Bring the mixture to a simmer.
- Add chicken breasts to the skillet, cover, and simmer for 20 minutes until chicken is cooked through.
- Remove chicken from the skillet and shred using two forks.
- Return shredded chicken to the skillet and stir to coat with the sauce. Simmer for an additional 5 minutes.
- Warm corn tortillas in a dry skillet or microwave.
- Assemble tacos by placing chicken tinga on each tortilla, topped with avocado slices, chopped cilantro, and a squeeze of lime.
